Kombucha Basics:
People have been drinking fermented tea for many hundreds of years all around the world, praising its probiotic benefits as well as its refreshing flavour and calling it by various names. Kombucha is an ancient fermented tonic made from sweetened tea. This effervescent beverage once cultured, contains a host of beneficial bacteria, yeasts, and acids provided to it by its mother culture, referred to as a SCOBY.
Good gut bacteria (aka, probiotics) are important for optimal health and are particularly essential for proper digestive function. Kombucha tea is made by combining specific strains of good bacteria, sugar, and yeast with a tea (typically green or black), and allowing it to ferment. This fermentation process produces a probiotic-rich drink.
